Recipe: Baba Ganoush π
Ingredients π
- 2 large eggplants
- 1/4 cup tahini
- 2 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)

Step 1 π
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
Step 2 π
Cut eggplants in half lengthwise, and score the flesh with a knife in a crisscross pattern. Place eggplant halves cut side down on the prepared baking sheet. Roast in preheated oven until very soft, about 45 minutes. Let cool for 10 minutes.
Step 3 π
Scoop the flesh out of the cooled eggplant halves into a bowl. Mash the eggplant with a fork or blend it in a food processor until smooth. Add tahini, garlic, lemon juice, olive oil, salt and pepper; mix well. Garnish with parsley (optional). Serve at room temperature with pita bread or chips.
