Recipe: Banh Mi π
Ingredients π
- 2 cups cooked white rice
- 1/2 cup pickled carrots and daikon
- 1/4 cup cucumber, julienned
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon fish sauce
- 2 tablespoons sriracha sauce
- 4 French baguettes, cut in half
- 8 ounces cooked pork or chicken, sliced thin
- 4 ounces mayonnaise

Step 1 π
Preheat oven to 350 degrees F (175 degrees C). Place the French baguettes on a baking sheet and bake for 10 minutes. Remove from oven and allow to cool.
Step 2 π
In a bowl, combine the pickled carrots and daikon, cucumber, cilantro, fish sauce, and sriracha sauce. Mix together until well combined.
Step 3 π
Spread the mayonnaise on both sides of each baguette. Divide the pork or chicken among the four halves of baguettes. Top each with a portion of the pickled vegetables mixture. Serve with white rice.
