Recipe: Brazilian Feijoada π
Ingredients π
- 1 lb black beans
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 green bell pepper, chopped
- 2 cups diced tomatoes
- 1 smoked ham hock
- 4 oz bacon, cut into pieces
- 4 oz smoked sausage, cut into pieces
- 1/4 tsp oregano leaves
- 2 bay leaves
- Salt and pepper to taste

Step 1 π
Rinse and sort the beans and soak overnight in a large bowl filled with cold water. Drain the beans and set aside.
Step 2 π
Heat the olive oil in a large pot over medium heat and add the onion, garlic and green pepper. Cook for about 5 minutes until the vegetables are tender. Add the tomatoes, ham hock, bacon and sausage to the pot.
Step 3 π
Add the oregano leaves, bay leaves and salt and pepper to taste. Simmer for about 30 minutes, stirring occasionally. Add the soaked beans to the pot and bring to a boil. Reduce heat to low and simmer for another 30 minutes or until beans are tender. Serve hot with white rice.
