Recipe: Burritos π
Ingredients π
- 8 flour tortillas
- 1 lb ground beef
- 1 small onion, chopped
- 1 (15 oz) can black beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes with green chilies, undrained
- 1 (1.25 oz) package taco seasoning mix
- 1 cup shredded cheddar cheese
- Shredded lettuce, chopped tomatoes, sour cream and salsa to serve (optional)

Step 1 π
In a large skillet over medium heat, cook ground beef and onion until beef is browned. Drain any excess fat. Add black beans, tomatoes with green chilies and taco seasoning mix; stir to combine. Simmer for 10 minutes. Remove from heat and set aside.
Step 2 π
Warm the tortillas in a skillet or microwave until they are softened and easy to work with. Place a scoop of the beef mixture down the center of each tortilla; top with cheese and lettuce, if desired. Fold the sides of the tortilla up over the filling and roll it up like a burrito.
Step 3 π
Heat a large skillet on medium heat; add burritos to pan and cook until golden brown on each side (2-3 minutes). Serve immediately with your choice of toppings such as diced tomatoes, sour cream and salsa. Enjoy!
