Recipe: Chorizo And Egg Tacos π
Ingredients π
- 4 large eggs
- 2 tablespoons milk
- 1 teaspoon olive oil
- 1/4 cup chopped onion
- 1/2 cup diced chorizo sausage
- 4 (6 inch) corn tortillas
- 1/2 cup shredded Cheddar cheese
- Salt and pepper to taste

Step 1 π
In a medium bowl, whisk together eggs and milk. Heat oil in a large skillet over medium heat. Add onion; cook and stir until soft, about 3 minutes. Add chorizo; cook and stir until lightly browned, about 5 minutes.
Step 2 π
Pour egg mixture into the skillet; season with salt and pepper to taste. Cook and stir until eggs are scrambled and set, about 5 minutes. Remove from heat.
Step 3 π
Warm tortillas in a separate skillet over low heat or in microwave for 30 seconds. Place some of the egg and chorizo mixture into each tortilla; top with cheese. Fold in half to serve and enjoy!
