Recipe: Coconut And Ginger Rice π
Ingredients π
- 2 tablespoons coconut oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups long grain rice
- 4 cups vegetable broth
- 2 tablespoons fresh grated ginger
- 1/4 cup shredded coconut
Directions π
Step 1 π
Heat the coconut oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.

Add the rice and stir until lightly toasted. Pour in the vegetable broth and add the ginger. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, or until the liquid is absorbed and the rice is tender.

Add the shredded coconut to the pan. Stir to combine and cook for an additional 5 minutes. Serve hot with your favorite side dishes.
