Recipe: Crepes Suzette π
Ingredients π
- 4 eggs
- 2 cups of milk
- 2 tablespoons of melted butter
- 1 tablespoon of sugar
- 1 pinch of salt
- 2 cups of flour
- Orange zest, to taste
- 2 tablespoons of Grand Marnier or orange liqueur
- 2 tablespoons of butter, for sauce
- Β½ cup of orange juice, for sauce
- ΒΌ cup of sugar, for sauce
- Orange slices for garnish, optional

Step 1 π
In a large bowl, whisk together the eggs and milk. Whisk in the melted butter, sugar and salt until combined. Gradually add the flour while whisking until the batter is smooth. Fold in the orange zest. Let the batter rest in the refrigerator for at least 30 minutes before using.
Step 2 π
Heat a nonstick skillet over medium heat. Grease lightly with butter or cooking spray. Pour about ΒΌ cup of batter onto the hot skillet and spread it evenly with a spatula to form a thin crepe. Cook until lightly golden on one side, then flip and cook the other side until golden as well. Remove from skillet and repeat with remaining batter.
Step 3 π
In a small saucepan over medium heat melt together the butter, orange juice and sugar to create a thick syrup. Stir in Grand Marnier or orange liqueur and simmer for 1 minute more before removing from heat. Place each crepe on an individual plate and spoon some sauce on top of each one before folding into quarters. Drizzle with more sauce overtop and garnish with orange slices if desired before serving.
