Recipe: Falafel With Tahini Sauce π
Ingredients π
- 1 cup dried chickpeas, soaked overnight
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons freshly chopped parsley
- 2 tablespoons freshly chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Vegetable oil for frying
For the tahini sauce:
- 1/4 cup tahini
- Juice of one lemon
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- Salt and pepper to taste

Step 1 π
Drain and rinse the chickpeas and place into a food processor. Add the garlic, onion, parsley, cilantro, cumin, coriander and salt and pepper. Pulse until everything is combined but not completely pureed. The mixture should be slightly chunky.
Form into small patties or balls about 2 inches in diameter. Heat the oil in a large skillet over medium heat.
Step 2 π
Fry the falafel until golden brown on both sides (about 3 minutes per side). Drain on paper towels and keep warm.
Step 3 π
To make the tahini sauce: combine all ingredients in a small bowl and whisk until smooth. Serve with falafel.
