Recipe: French Onion Soup π
Ingredients π
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 8 cups beef broth
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 8 slices French baguette
- 8 slices Gruyere cheese

Step 1 π
Heat the butter and oil in a large pot over medium heat. Add the onions and garlic and cook, stirring often, until softened and golden brown, about 20 minutes. Stir in the thyme. Sprinkle the flour over the onion mixture and stir to combine. Cook for 3 minutes.
Step 2 π
Slowly pour in the beef broth while stirring to combine. Bring to a boil, reduce heat to low, and add bay leaves. Simmer for 30 minutes. Stir in Worcestershire sauce and season with salt and pepper to taste.
Step 3 π
Preheat broiler. Ladle soup into ovenproof bowls set on a baking sheet or roasting pan. Float a slice of baguette on top of each bowl of soup and top with a slice of Gruyere cheese. Broil 6 inches from heat source until cheese is melted and bubbly, about 5 minutes. Serve hot.
