Recipe: Greek Lamb Kebabs π
Ingredients π
- 2 lbs. boneless leg of lamb, cut into 1-inch pieces
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 2 tbsp oregano
- 2 tsp ground cumin
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/4 cup fresh lemon juice, plus extra for serving

Step 1 π
In a large bowl, mix together the olive oil, garlic, oregano, cumin, salt and pepper. Add the lamb and toss to coat. Cover and refrigerate for at least 30 minutes or up to overnight.
Step 2 π
Preheat the grill to medium high heat. Thread the marinated lamb onto skewers and brush with any remaining marinade. Grill the kebabs until they are cooked through and lightly charred on all sides, about 8 minutes total. Serve with extra lemon juice.
