Recipe: Greek-style Roasted Vegetables π
Ingredients π
- 2 large red peppers, diced
- 2 large yellow peppers, diced
- 2 large zucchinis, diced
- 3 large tomatoes, diced
- 1 red onion, diced
- 5 cloves garlic, minced
- 1/3 cup olive oil
- 2 tablespoons fresh oregano leaves
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Step 1 π
Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
Step 2 π
In a large bowl, mix together the red peppers, yellow peppers, zucchinis, tomatoes, onion and garlic. Pour in the olive oil and season with oregano leaves salt and pepper. Mix until vegetables are evenly coated.
Step 3 π
Pour the vegetables into the prepared baking dish. Bake in preheated oven for 45 minutes or until vegetables are tender and lightly browned. Serve warm.
