Recipe: Greek-style Stuffed Peppers ๐
Ingredients ๐
- 4 large bell peppers, any color
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 cup cooked quinoa or brown rice
- 1 cup cooked black beans, drained and rinsed
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- ยฝ teaspoon dried oregano
- ยผ teaspoon ground cumin
- ยฝ cup crumbled feta cheese
- Salt and freshly ground black pepper to taste
- Chopped fresh parsley for garnish (optional)
Directions ๐
Step 1 ๐
Preheat oven to 375ยฐF. Cut the tops off the peppers and remove the seeds and membranes. Place peppers in a baking dish.
Step 2 ๐
Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add quinoa or brown rice, black beans, garlic, tomato paste, oregano, and cumin and cook for another 3 minutes. Remove from heat and stir in feta cheese. Season with salt and pepper to taste.

Spoon the filling into the prepared peppers and bake for 25 minutes or until peppers are tender. Garnish with parsley if desired before serving.
