Recipe: Grilled Vegetable And Halloumi Skewers π
Ingredients π
- 2 red peppers, deseeded and cut into chunks
- 2 yellow peppers, deseeded and cut into chunks
- 2 courgettes, cut into thick slices
- 200g halloumi cheese, cut into cubes
- 2 tablespoons olive oil
- 1 tablespoon of oregano
- Salt and pepper to taste

Step 1 π
Preheat the grill to a medium heat.
Step 2 π
Thread the vegetables and halloumi onto skewers, alternating between the two. Place onto a baking tray.
Step 3 π
Drizzle with the olive oil and sprinkle with oregano. Season with salt and pepper to taste. Grill for 10 minutes until the vegetables are cooked through and the halloumi is golden brown. Serve immediately.
