Recipe: Japchae π
Ingredients π
- 4 ounces dried sweet potato noodles
- 1 tablespoon vegetable oil
- 1/2 cup sliced onions
- 3/4 cup sliced shiitake mushrooms
- 2 cloves garlic, minced
- 1/2 cup carrots, julienned
- 1/2 cup bell pepper, julienned
- 1/2 teaspoon sesame oil
- 2 tablespoons soy sauce
- 2 teaspoons sugar
- 3 tablespoons toasted sesame seed

Step 1 π
Soak sweet potato noodles in hot water for 20 minutes or until softened. Drain and rinse with cold water. Set aside.
Step 2 π
Heat vegetable oil in a large skillet over medium heat. Add onions, mushrooms and garlic; cook and stir until vegetables are softened, about 5 minutes. Add carrots, bell pepper and sesame oil; cook and stir for an additional 5 minutes.
Step 3 π
Add soy sauce, sugar and noodles to the skillet; cook and stir until all ingredients are evenly distributed and noodles are heated through, about 5 minutes more. Sprinkle with toasted sesame seeds before serving.
