Recipe: Mango Sticky Rice π
Ingredients π
- 2 cups uncooked sticky (glutinous) rice
- 2 cans full-fat coconut milk
- 1/2 cup granulated sugar, divided
- 1/4 teaspoon salt
- 2 large mangoes, peeled and cut into thick slices

Step 1 π
Soak the sticky rice in water for at least 4 hours or overnight. Drain and rinse before using.
Step 2 π
Combine the coconut milk, 1/4 cup of sugar, and salt in a medium saucepan over medium heat. Stir until the sugar dissolves. Add the sticky rice and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let stand covered for 5 minutes. Fluff with a fork before serving.
Step 3 π
Toss mango slices with remaining 1/4 cup of sugar in a bowl. Heat a nonstick skillet over medium heat. Add the mango mixture and cook for about 3 minutes or until lightly caramelized on both sides, stirring occasionally. Serve mango on top of sticky rice.
