Recipe: Mediterranean Quinoa Salad π
Ingredients π
- 1 cup quinoa
- 2 cups vegetable broth
- 1/2 cup crumbled feta cheese
- 1/4 cup diced red onion
- 1/2 cup diced red pepper
- 1/2 cup diced cucumber
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste

Step 1 π
Rinse the quinoa in a fine mesh strainer under cold water for about a minute. Place the quinoa in a medium saucepan with the vegetable broth. Bring to a boil over high heat, then reduce heat to low and simmer for 15 minutes, or until all of the liquid is absorbed. Fluff with a fork and remove from heat. Let cool for 10 minutes.
Step 2 π
In a large bowl, combine cooked quinoa, feta cheese, red onion, red pepper, cucumber, and parsley. Drizzle olive oil and lemon juice over the top and season with salt and pepper to taste. Toss gently to combine. Serve chilled or at room temperature.
