Recipe: Moroccan Tagine π
Ingredients π
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 2 carrots, diced
- 2 potatoes, diced
- 2 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup golden raisins
- 2 tablespoons honey
- salt and pepper to taste

Step 1 π
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the cumin, coriander, ginger, and cayenne pepper; cook for another minute.
Step 2 π
Add the carrots and potatoes to the saucepan and stir to coat with spices. Pour in the vegetable broth and tomatoes; bring to a boil. Reduce heat to low and simmer until vegetables are tender, about 20 minutes.
Step 3 π
Stir in the raisins and honey; season with salt and pepper. Simmer for 10 more minutes until flavors have blended together. Serve hot over couscous or rice.
