Recipe: Potato Pancakes π
Ingredients π
- 2 cups grated potatoes, squeezed to remove excess liquid
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons butter, melted
Directions π
Step 1 π
In a medium bowl, mix together potatoes, flour, salt and pepper. Heat the oil in a large skillet over medium heat. Drop heaping spoonfuls of the potato mixture into the hot oil. Flatten each pancake with a spatula to about 1/4 inch thickness. Fry until golden brown on both sides; about 5 minutes per side. Transfer pancakes to a plate lined with paper towels to drain off excess oil. Drizzle with melted butter before serving.

Serve hot with apple sauce or sour cream if desired. Enjoy!
