Recipe: Quesadillas π
Ingredients π
- 8-10 flour tortillas
- 2 cups grated cheese (cheddar, Monterey jack, or a combination)
- 1/2 cup cooked and crumbled bacon or cooked and crumbled chorizo sausage
- 2 cups cooked and shredded chicken
- 1/2 cup diced tomatoes (optional)
- 1/2 cup diced onions (optional)
- 2 tablespoons olive oil

Step 1 π
Preheat a large skillet over medium heat. In a medium bowl, mix together the cheese, bacon or chorizo, chicken, tomatoes, and onions.
Step 2 π
Brush one side of a tortilla with olive oil. Place the tortilla on the preheated skillet with the oiled side down. Spread 1/4 cup of the cheese mixture over one half of the tortilla. Fold the other half of the tortilla over to cover the filling. Cook for about 3 minutes per side until lightly browned and crisp. Remove from skillet and repeat with remaining ingredients. Cut into wedges to serve warm.
