Recipe: Ratatouille π
Ingredients π
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 eggplant, chopped
- 2 zucchini, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, seeded and chopped
- 1 yellow bell pepper, seeded and chopped
- 2 tomatoes, diced
- 2 tablespoons fresh basil leaves, finely chopped
- Salt and pepper to taste

Step 1 π
Heat the olive oil in a large skillet over medium heat. Add the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
Step 2 π
Stir in the eggplant, zucchini, garlic, red bell pepper, yellow bell pepper and tomatoes; season with basil, salt and pepper. Cover the skillet; reduce heat to low and simmer for 20 minutes. Stir occasionally during cooking. Serve warm.
