Recipe: Roasted Cauliflower Tacos π
Ingredients π
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 8 small flour tortillas
- 1/2 cup diced tomatoes
- 2 avocados, diced
- 2 tablespoons fresh cilantro, chopped
- Lime wedges, for serving

Step 1 π
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Place cauliflower florets on baking sheet and drizzle with olive oil. Sprinkle with chili powder, cumin, garlic powder and salt and pepper. Toss to coat evenly. Roast for 20 minutes or until cauliflower is golden brown and tender.
Step 2 π
Warm tortillas in the oven or on the stovetop. Divide roasted cauliflower between tortillas and top with tomatoes, avocado and cilantro. Serve with a lime wedge if desired.
