Recipe: Roasted Garlic Mashed Potatoes π
Ingredients π
- 4 pounds potatoes, peeled and cut into 1/2 inch cubes
- 2 heads of garlic, cloves separated, peeled and smashed
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup butter
- 1/2 cup warm milk
- 2 tablespoons chopped fresh parsley

Step1 π
Preheat oven to 375 degrees F (190 degrees C). Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10 minutes. Drain and set aside.
Step 2 π
Combine the garlic cloves and olive oil in a small bowl. Spread onto a baking sheet and season with salt and pepper. Roast in preheated oven until golden brown, about 20 minutes. Remove from oven and set aside.
Step 3 π
Melt butter in saucepan over medium heat; add warm milk, roasted garlic (including oil), salt, and pepper. Simmer for 5 minutes; stir in parsley. Mash potatoes with butter mixture until desired consistency is reached; serve immediately.
