Recipe: Roasted Vegetable Quinoa Bowl π
Ingredients π
- 2 cups cooked quinoa
- 2 tablespoons olive oil
- 1 bell pepper, cut into cubes
- 1 zucchini, cut into cubes
- 1 red onion, cut into cubes
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Β½ cup feta cheese (optional)
- Chopped parsley for garnish (optional)

Step 1 π
Preheat oven to 400 degrees F and line a large baking sheet with parchment paper. Set aside.
Step 2 π
In a large bowl, combine the bell pepper, zucchini, red onion, olive oil, garlic, salt and pepper. Toss until the vegetables are evenly coated in the olive oil mixture. Spread the vegetables onto the prepared baking sheet in an even layer.
Step 3 π
Roast in the preheated oven for 15 minutes or until lightly browned and tender. Remove from oven and let cool slightly.
Step 4 π
In a large bowl combine the cooked quinoa and roasted vegetables together. Add feta cheese (if using) and garnish with chopped parsley (if using). Serve warm or chilled.
