Recipe: Samosas π
Ingredients π
- 2 cups all-purpose flour
- 1 teaspoon salt
- 3/4 cup water -1/2 cup vegetable oil -1/2 teaspoon cumin seeds -1 onion, chopped -1 potato, peeled and diced
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 2 tablespoons chopped fresh cilantro leaves
- Salt and pepper to taste
- Vegetable oil for frying

Step 1: Make the Dough π
In a large bowl, combine flour and salt. Gradually stir in water and oil until a soft dough forms. Knead the dough for 5 minutes, then cover with plastic wrap and let rest for 30 minutes.
Step 2: Make the Filling π
Heat cumin seeds in a skillet over medium heat until lightly toasted. Add onion; cook and stir until lightly browned. Stir in potato, turmeric, coriander, garam masala, cilantro leaves, salt, and pepper. Cook 5 minutes more or until potatoes are tender. Remove from heat; cool completely before using as filling.
Step 3: Assemble the Samosas π
Divide dough into 16 pieces; roll each piece into a small circle about 4 inches in diameter. Place approximately 1 tablespoon of the filling onto one half of each circle; fold circles in half to form semicircles. Press edges together with your fingers or use a fork to crimp them closed.
Step 4: Fry the Samosas π
Heat oil in deep fryer or large saucepan to 375 degrees F (190 degrees C). Cook samosas in batches until golden brown; remove with slotted spoon or skimmer and drain on paper towels. Serve warm with chutney or yogurt sauce if desired.
