Recipe: Spanakopita π
Ingredients π
- 1/2 cup olive oil
- 2 bunches scallions, chopped
- 2 large bunches fresh spinach, washed and chopped
- 2 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon ground nutmeg
- 8 ounces feta cheese, crumbled
- 8 ounces phyllo dough
- 1/2 cup melted butter

Step 1 π
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
Step 2 π
Heat the oil in a large skillet over medium heat. Add the scallions and cook until softened. Add the spinach and cook until wilted. Stir in the garlic, parsley, oregano, and nutmeg; season with salt and pepper. Remove from heat and cool slightly. In a bowl combine the spinach mixture with feta cheese; mix lightly.
Step 3 π
Unroll the phyllo dough on a clean surface. Cut it into four equal pieces. Place one piece of phyllo dough into the baking dish, brush lightly with butter. Top with another sheet of phyllo dough, brush with butter again; repeat two more times (four sheets total). Pour in the spinach and feta mixture; spread evenly over top of phyllo sheets. Top with remaining sheet of phyllo dough; brush lightly with melted butter. Cut through all layers to create diamond shapes or squares when finished baking.
Step 4 π
Bake for 30 minutes in the preheated oven until golden brown on top. Cool for 10 minutes before serving.
