Recipe: Spanish Tortilla π
Ingredients π
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 8 eggs, lightly beaten
- 1 cup frozen peas, thawed
- salt and pepper to taste
Directions π
Step 1 π
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until softened. Add the potatoes; cook and stir until lightly browned. Pour in the eggs; mix until combined. Reduce heat to low and add in the peas. Season with salt and pepper to taste. Cover skillet with a lid and cook for 15 minutes or until eggs are set.
Step 2 π
Place a plate over the top of the skillet; carefully flip the tortilla onto it so it’s cooked side up. Return to skillet and cook for an additional 5 minutes or until lightly browned on the other side. Slice and serve warm.
