Recipe: Spicy Peanut Stew π
Ingredients π
- 2 tablespoons vegetable oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon curry powder
- 1/2 teaspoon cayenne pepper
- 2 sweet potatoes, peeled and diced
- 2 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes with juice
- 1/2 cup creamy peanut butter
- 2 cups cooked chickpeas, rinsed and drained
- Salt and freshly ground black pepper to taste

Step 1 π
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the ginger, curry powder, and cayenne pepper. Add the sweet potatoes and cook for another minute.
Step 2 π
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Stir in the tomatoes with juice, peanut butter, chickpeas, salt and pepper. Simmer for an additional 10 minutes.
