Recipe: Spicy Thai Peanut Noodles π
Ingredients π
- 8 ounces dry spaghetti
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger root
- 1/2 teaspoon red pepper flakes
- 2 tablespoons soy sauce
- 2 tablespoons creamy peanut butter
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1/4 cup chopped peanuts, for garnish (optional)

Step 1 π
Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente; drain.
Step 2 π
Heat oil in a large skillet over medium heat. Add garlic, ginger and red pepper flakes; cook and stir for about 1 minute. Add soy sauce, peanut butter, rice vinegar, sesame oil and honey; bring to a boil. Reduce heat to low and simmer for about 5 minutes.
Step 3 π
Add cooked spaghetti to the skillet with the sauce; toss gently to coat evenly. Cook an additional 5 minutes or until heated through. Sprinkle with chopped peanuts before serving, if desired.
