Recipe: Thai Fried Rice π
Ingredients π
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots
- 3 cups cooked white rice
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 teaspoons brown sugar
- 2 eggs, lightly beaten
- 1/4 cup chopped cilantro leaves

Step 1 π
Heat the oil in a large skillet over medium heat. Add the garlic, onion and bell pepper and cook until softened, about 5 minutes. Stir in the peas and carrots and cook for an additional 3 minutes.
Step 2 π
Add the cooked rice to the pan and stir to combine with vegetables. Add the soy sauce, fish sauce and brown sugar and stir to coat the rice. Push the rice to one side of the pan and add the eggs to the other side. Scramble until cooked through then mix into the rice. Cook for an additional 3 minutes until heated through. Stir in cilantro leaves before serving.
