Recipe: Tzatziki π
Ingredients π
- 1 large cucumber, grated
- 2 cloves garlic, minced
- 2 cups plain Greek yogurt
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh dill (optional)

Step 1 π
Place the grated cucumber in a colander set over a bowl and sprinkle the salt over it. Let the cucumber sit for 10 minutes to allow some of the moisture to be released. Press down on the cucumber with your hands or a spoon to remove more moisture and then transfer it to a separate bowl.
Step 2 π
Add the garlic, Greek yogurt, olive oil, lemon juice, pepper and dill (if using) to the cucumber. Mix together until all ingredients are combined. Taste and adjust for seasoning as desired.
Step 3 π
Refrigerate for at least an hour before serving. Serve chilled or at room temperature with pita bread or crackers. Enjoy!
