Recipe: Vietnamese Beef Salad π

500g beef fillet

1/2 cup fresh lime juice

2 cloves garlic, minced

1/2 teaspoon fish sauce

1 large red chilli, finely chopped

2 tablespoons olive oil

4 cups mixed salad greens (such as baby spinach, rocket and cos lettuce)

2 carrots, julienned
-
1/2 cup coriander leaves
-
1/4 cup crushed roasted peanuts or cashews

Salt and ground black pepper to taste

Step 1 π
Preheat the oven to 200C. Place the beef fillet in a greased baking dish and season with salt and pepper. Bake for 20 minutes or until cooked through. Remove from the oven and let cool before slicing into thin strips.
Step 2 π
In a small bowl, mix together the lime juice, garlic, fish sauce, chilli and olive oil to make a dressing. Season with salt and pepper to taste.
Step 3 π
Place the salad greens in a large serving bowl. Add the sliced beef strips, carrots, coriander leaves and nuts and toss to combine. Pour over the dressing and gently toss again until everything is evenly coated in the dressing.
