Recipe: Yakitori Skewers 🔗
Ingredients 🔗
-12 bamboo skewers -3 boneless chicken thighs, cut into small cubes -1/4 cup soy sauce -2 tablespoons sake -2 tablespoons mirin (sweet rice wine) -1 tablespoon sugar -1 tablespoon grated ginger -2 cloves garlic, minced -1 teaspoon sesame oil -4 scallions, cut into 2 inch pieces -4 shiitake mushrooms, stems removed and caps halved or quartered -4 cherry tomatoes, halved -Salt and pepper to taste
## Directions
Step 1 🔗
Soak bamboo skewers in water for at least 30 minutes. This will prevent them from burning during cooking.
Step 2 🔗
In a small bowl, combine soy sauce, sake, mirin, sugar, ginger and garlic. Whisk together to make the Yakitori marinade.
Step 3 🔗
Place chicken cubes in a large bowl. Add the Yakitori marinade and sesame oil and mix gently until all the chicken cubes are well coated with the marinade. Cover with plastic wrap and let it marinate in the refrigerator for at least 1 hour or up to 4 hours.
Step 4 🔗
Preheat grill to medium heat. Thread chicken cubes onto skewers alternating with scallions, mushrooms and tomatoes. Sprinkle with salt and pepper to taste. Grill for about 8 minutes or until cooked through, turning every few minutes to ensure even cooking. Serve warm with freshly cooked white rice if desired.
