Recipe: Zucchini Fritters π
Ingredients π
- 2 cups grated zucchini
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 2 tablespoons minced fresh parsley
- 2 eggs, lightly beaten
- 2 tablespoons olive oil

Step 1 π
In a medium bowl, combine the zucchini, flour, baking powder, garlic powder, onion powder and salt. Stir in the parsley and eggs until well blended.
Step 2 π
Heat the oil in a large skillet over medium heat. Drop tablespoonfuls of the batter into the hot oil. Flatten slightly with a spatula. Fry for 1 to 2 minutes per side or until golden brown. Drain on paper towels. Serve warm.
