Recipe: Zucchini Fritters With Feta And Dill π
Ingredients π
- 2 zucchini, grated
- 1/2 cup plain flour
- 2 eggs, lightly beaten
- 2 tablespoons olive oil
- 1/4 cup feta cheese, crumbled
- 2 tablespoons chopped fresh dill
- Salt and freshly ground black pepper, to taste

Step 1 π
Place the grated zucchini in a colander and sprinkle with salt. Leave for 10 minutes to draw out the moisture. Squeeze out as much excess liquid as possible then transfer to a bowl.
Step 2 π
Add the flour, eggs, feta cheese, dill and season with salt and pepper. Mix until well combined.
Step 3 π
Heat the olive oil in a large non-stick frying pan over medium heat. Place tablespoonfuls of the mixture into the pan and cook for 3 minutes on each side or until golden brown and cooked through. Drain on paper towel before serving.
